Viennoiserie- Croissants. Twice Baked. Cruffins. Danishes. Sweet and Savoury. Made Cold Slab French Method, with minimum 30% butter and fermented for 24 hours.
Sourdough Bread- Highlands Superseed. West Lake White Sourdough. Made slowly and mixed by hand. With wild yeast and flour milled in the Village of Haliburton, then fermented overnight.
Tangzhong Cinnamon Buns with Ceylon Cinnamon, Cardamom and Cream Cheese Icing

My backstory…..
I’ve spent my past 27 years in kitchens between Toronto and Vancouver, some very acclaimed and most recently as Chef de Cuisine at The Haliburton Post House. I arrived at a realization that I deeply craved change and independence so after some soul searching I took a chance with the Haliburton Farmers Market. What began as 10 loaves of sourdough at my first Market in Head Lake Park grew into my very own passion project and a new love for baking. I’ve always been a wild child but learned through the discipline of kitchens to channel that energy into creative ways allowing me to arrive to where I’ve always wanted to be. Now it is my absolute honour to share this passion with the community around the Haliburton Highlands!
